Full menus. One fire. Never leave the circle.
Each menu is built for the Hearth's three heat zones: what goes where and in what order, so everything is ready together. Light the fire about 25–30 minutes before you want to cook. Longest-cooking food goes on first, quick food last.
The order
Sear over the grate, cook on the inner plate, keep finished food warm at the edge. Use a meat thermometer and rest meat on a board before slicing. Plan about ½ lb of raw meat per adult for a main course.
